Here is another cake I made for a New Year’s party hosted by my Omani Friend. I call it a Healthy Carrot Bundt Cake because the ingredients were carefully selected and organic since the party host is very keen with anything sweets as a precaution for his health.
I used my own carrot cake recipe in making this cake. The hefty amount of carrots gives a pleasurable taste to the cake along with the added raisins and slivered almonds for an extra flavor.
As you can see that the cake was baked using a Bundt-style cake pan, that gives a distinctive shape with a cylindrical hole like a central tube or chimney on the center and fluted-grooved sides.
The cylindrical tube helps the baking process and keep the cake evenly baked especially on the center.
However since I used cream cheese frosting for the cake, the grooved sides are not clearly visible as it was evenly covered by the frosting.
Eating a carrot cake alone (without the frosting) is more ideal for those who are particular with their diet because the ingredients normally contain fresh carrots with canola oil, and brown sugar.
