Other than the Minion Cupcakes, I also made a birthday cake for Xyrelle.
But instead of having a chocolate cake, her family wanted my version of No-Bake BLUEBERRY Cheesecake. The family requested to have it a cold cheesecake type since they like the soft-ice-cream texture of it.
This time, I used Marzipan in creating the googles, eyeballs, hair strands, and lips.
The sweetened blueberry was stacked in the middle of the cream cheese mixture creating a sandwich effect on the cheesecake.
To keep the cheesecake from melting, I mix dissolved gelatin powder to keep it stiff for few hours while being displayed on the table.
